Speck, native to the Alto Adige region, is cured pork seasoned with juniper and pepper that has been slowly smoked over several months.

Sliced thinly, Speck is a delicious addition to salumi boards or atop pizzas and in sandwiches. Speck is also great cubed, like pancetta, and used in carbonara and stews.
